We read with great interest the article by Bondonno et al1 dealing with the relationship between vegetable-derived nitrate intake and atherosclerosis of the common carotid artery (CCA) in a cohort of elderly women. The results of their study demonstrated that higher vegetable nitrate intake was associated with a lower maximum CCA intima–media thickness and lower mean CCA intima–media thickness. In addition, it was shown that higher intake of vegetable nitrate predicted a lower risk of future ischemic cerebrovascular disease events. The authors proposed that …
